It's a Romanian recipe D, called Slalina. Similar to bacon, but it is smoked so can be eaten without cooking. We bought some wonderful meaty Pork Hocks as well, and they are being cured as we speak (or type I guess) - they obviously take longer due to the thickness. Yum Yum!! :)
Yum, yum's right! I could die for to live at your house! I bet there are some beautiful smoky smells wafting from your place to tantalize the neighbours. What fantastic small goods processors you two are. You should go into business eh? The meat in pork hocks is moist and rich and yummy, yummy, yummy........
With all the bureaucracy involved in business and food licences, no way we will go into business. We will just keep puttering away (and salivating the neighbour's taste buds) and have these goodies for ourselves and share with family and friends :)
